~ Chocolate Rum Truffles ~
1--6 oz pkg semisweet chocolate morsels
3 T butter or margarine
3 T powdered sugar
2 egg yolks
1 T dark rum
Cocoa
Place chocolate morsels in top of a double boiler;
bring water to a boil. Reduce heat to low; cook until
chocolate melts. Add butter and powdered sugar, stirring
until sugar dissolves. Remove from heat. Add egg yolks,
one at a time, beating with an electric mixer after each
addition. Stir in rum. Pour mixture into a bowl; cover and
let sit 12 hours in a cool, dry place (do not refrigerate)
Shape mixture into 1 inch balls; roll lightly in cocoa.
Makes 2 dozen

with a homespun fabric bow and add gift tag.
