~ White Chocolate Chip ~
Oatmeal Cookies
1 cup butter or margarine, softened
1 cup brown sugar, firmly packed
1 cup granulated sugar
2 large eggs
2 t vanilla
3 cups all-purpose flour
1 t baking soda
1 t baking powder
1 t salt
1 1/2 cups uncooked rolled oats
2 cups white chocolate chips
1 cup coarsely chopped pecans
Preheat oven to 350F.
Beat butter at medium speed with an electric mixer until
creamy; gradually add sugars, beating well. Add eggs,
one at a time, beating just until yellow disappears after
each addition. Stir in vanilla. Combine flour and next 3
ingredients; gradually add to butter mixture, beating until
blended. Stir in oats, morsels, and pecans. Drop by
tablespoonfuls onto greased (or parchment paper lined)
cookie sheets. Bake for 12 minutes. Cool on cookie
sheets for 3 minutes; remove to wire racks
to cool completely.
Makes 5 dozen cookies
