~ White Chip Apricot Oatmeal Cookies ~
3/4 cup butter or margarine, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 cup flour
1 t baking soda
2 1/2 cups rolled oats
1 2/3 cups white chips
3/4 cup chopped dried apricots
Preheat oven to 375F.
Beat butter, granulated sugar, and brown sugar in a
large bowl until fluffy. Add egg and beat well. Add
flour and baking soda. Beat until well blended. Stir
in oats, white chips, and apricots. Loosely form
rounded teaspoonfuls of dough into balls. Place on
ungreased cookie sheets. Bake for 7 - 9 minutes or
just until lightly browned. Do not over bake. Cool
slightly. Remove from the cookie sheets to wire racks
to cool completely.
Makes 3 1/2 dozen cookies

For gift giving package cookies in a decorative
cellophane bag. Place bag of cookies in a napkin
lined wire basket. Add several different coffees,
coffee mugs, and napkins to basket. Embellish
basket with ribbon, ornament, and gift tag.
