~ Vanilla Wafer Cookies ~
1/2 cup butter**, softened
(**no substitute)
1 cup sugar
1 egg
1 T vanilla
1 1/3 cups all-purpose flour
1/4 t salt
3/4 t baking powder
Preheat oven to 350F.
In a mixing bowl, cream butter and sugar. Beat in
egg and vanilla. Combine dry ingredients; add to
creamed mixture and mix well. Drop by teaspoonfuls
2 inches apart onto ungreased (or parchment paper
lined) cookie sheets. Bake for 12 - 15 minutes or
until edges are golden brown. Remove to wire rack
to cool completely.
Makes 3 1/2 dozen cookies
