~ Quick & Easy Cookies ~
1--box Yellow Cake Mix
2 cups oatmeal
1 cup sugar
1 cup oil
2 eggs
1 t vanilla
1 cup chopped pecans (optional)
Preheat oven to 325F.
Place the above ingredients in a large
bowl and mix thoroughly. Roll into small
balls and place on an ungreased cookie
sheet. Bake for 15 - 20 minutes.
Makes 5 - 7 dozen cookies

For gift giving package cookies in a 2 quart
acrylic canister with wire hinged lid. Embellish
canister with curly Christmas ribbon around neck
of canister and Christmas graphics.
