~ Pumpkin Cookies ~
with Cream Cheese Icing
~Cookies~
1 cup granulated sugar
1 cup butter
1 egg
2 t vanilla
1 cup canned pumpkin**
(**not pie filling)
2 1/2 cup flour
2 t baking powder
1 t soda
~Icing~
2 sticks unsalted butter
8 oz. cream cheese, room temperature
1 lb confectioners sugar
1 t vanilla extract
1/8 t salt
Preheat oven to 350F.
Cream sugar and butter; add remaining cookie
ingredients and mix well. Drop by spoonfuls
onto cookie sheet and bake for 12 - 15 minutes.
Cool on wire rack. Icing: Combine butter and
cream cheese. Add confectioners sugar, vanilla
extract and salt. Mix well and spread on
cooled cookies.

For gift giving decorate a plate with enamel
or ceramic paint. Let dry. Wrap cookies and
plate with Saran Wrap. Add Christmas greenery,
ribbon and gift tag.
