~ Pumpkin Cake Cookies ~
3/4 cup packed brown sugar
1/4 cup softened margarine
3/4 cup mashed cooked pumpkin
1 egg
1 1/4 cups flour
1/2 T baking powder
1/4 T baking soda
1/2 T cinnamon
1/4 T allspice
1/8 T salt
1/8 T nutmeg
Preheat oven to 350F.
Cream sugar and margarine until light
and fluffy. Add pumpkin & egg; beat well.
Combine dry ingredients; add to creamed
mixture, mixing well. Drop dough by heaping
tablespoonfuls 2 inches apart onto greased
cookie sheet. Bake for 18 minutes until
lightly browned.
