~ Potato Chip Cookies ~
1 cup butter
1 cup brown sugar, firmly packed
1/2 cup granulated sugar
2 eggs
1 t vanilla extract
2 cups potato chips, finely ground
3 cups all purpose flour
4 cups confectioners sugar
1/2 cup milk
Preheat oven to 350F.
Cream butter and sugars together until
fluffy. Add eggs and vanilla; beat
until smooth. Add potato chips and
flour; stir until a soft dough forms.
Cover and chill for 30 minutes. On a
lightly floured surface, roll out dough
to 1/4 inch thickness. Use desired
cookie cutters to cut out cookies.
Transfer to a greased baking sheet.
Bake 10 - 12 minutes or until edges
are light brown.

For gift giving package cookies in a ziplock
bag. Place bag of cookies in a flannel gift bag.
To make flannel gift bag, use a 10 1/2 x 25
inch piece of flannel fabric. Matching right
sides and short edges, fold fabric in half.
Using 1/4 inch seam allowance, sew sides of
bag together. Turn bag right side out. Fringe
top edge of bag. Gather top of bag together
and secure with ribbon or raffia and add a
cookie cutter. Add gift tag.
