~ Popcorn Cookies ~
1/2 cup butter or margarine, softened
1 cup sugar
1 egg
1 t vanilla extract
1 1/4 cups all-purpose flour
1/2 t baking soda
pinch of salt
2 cups popped popcorn, slightly crushed
1 cup semisweet chocolate chips
1/2 cup chopped pecans
Preheat oven to 350F.
In a mixing bowl, cream the butter and sugar.
Beat in egg and vanilla. Combine flour, baking
soda and salt; add to the creamed mixture. Stir
in popcorn, chocolate chips and pecans. Drop by
tablespoon 2 inches apart onto greased baking
sheets. Bake for 13 - 14 minutes or until golden
brown. Cool on wire racks.
Makes 2 1/2 dozen cookies
