~ Peppermint Patty Surprise ~
2 cups mint chocolate chips, divided
1/2 cup butter
1 cup white sugar
2 egg
1 1/2 t vanilla extract
1 1/2 cups flour
1 1/2 t baking powder
1/4 t salt
27 mini peppermint patties, quartered
2/3 cup powdered sugar for rolling
Preheat oven to 350F.
Melt 1 cup chocolate chips in microwave, stirring
frequently until smooth; set aside to cool. In a
large bowl, cream butter and sugar until smooth.
Stir in the melted chocolate, eggs, and vanilla.
Blend in flour, baking powder, and salt. Then mix
in the remaining chocolate chips. Wrap 1 tablespoon
dough around each peppermint patty quarter. Roll
balls in powdered sugar, and place 1 1/2 inches
apart on cookie sheet. Bake 10 - 12 minutes.
Roll warm cookies in powdered sugar.
Makes 3 dozen cookies

acrylic canister with wire hinged lid. Embellish
canister with curly Christmas ribbon around neck
of canister and Christmas graphics.
