~ Peanut Chip and Oat Cookies ~
1 cup granulated sugar
1 cup brown sugar, firmly packed
1 cup butter and margarine, softened
1 cup peanut butter
3 large eggs
1 1/2 cups whole wheat flour
2 t baking soda
3 1/2 cups uncooked old-fashioned or quick-cooking oats
1 cup semisweet chocolate chips
1 cup butterscotch flavored chips
1 cup coarsely chopped salted peanuts
Preheat oven to 350F.
Combine sugar, brown sugar, butter and peanut butter
in large mixer bowl. Beat at medium speed, scraping
bowl often, until creamy (1 to 2 minutes). Add eggs;
continue beating until well mixed (1 to 2 minutes).
Add flour and baking soda. Reduce speed to low; beat
until well mixed (1 to 2 minutes). Stir in oats,
chocolate chips, butterscotch chips and peanuts by
hand. Drop dough by rounded tablespoonfuls 2 inches
apart onto ungreased cookie sheets. Bake for 10 - 12
minutes or until light golden brown. Let stand 1 minute;
remove from cookie sheets. Cool completely.
Makes 6 dozen cookies

Place cookies in box. Embellish box with ribbon and a
sprig of holly. Add gift tag.
