~ Peanut Butter Refrigerator Cookies ~
1 cup butter or margarine, softened
1 cup granulate sugar
1 cup smooth peanut butter
2 eggs
2 1/2 cups all-purpose flour
2 t baking soda
1/2 t salt
Combine margarine, sugar, peanut butter
and eggs; blend well. Sift flour once
before measuring and then sift with baking
soda and salt. Shape dough into long rolls
about 3 inches in diameter. Cover with waxed
paper. Chill thoroughly. When chilled, slice
and bake at 400F for 8 - 10 minutes.
Makes 5 - 6 dozen cookies
