~ Peanut Butter Oatmeal Chip Cookies ~
1 cup flour
1 cup quick cooking or old fashioned oats
1/2 t baking powder
1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1/3 cup creamy or chunky peanut butter
1 large egg
1 t vanilla
1/2 cup unsalted dry roasted peanuts, coarsely chopped
2/3 cup semisweet chocolate chips
Preheat oven to 350F.
Mix flour, oats, and baking powder; set aside. Beat
butter, sugars, peanut butter, egg and vanilla in a
large bowl with electric mixer until well blended.
With the mixer on low speed, gradually add the flour
mixture. Beat just until blended. Stir in the nuts
and the chips. Drop by rounded tablespoonfuls 2 inches
apaart on ungreased (or parchment paper lined) cookie
sheets. Bake for 13 - 15 minutes or until the tops
look dry and the edges are lightly browned. Tops will
still feel soft to the touch. Cool on cookie sheets
for 2 to 3 minutes, then transfer to wire rack
to cool completely.

For gift giving package cookies in a ziplock bag.
Place bag of cookies in a flannel gift bag. To
make flannel gift bag, use a 10 1/2 x 25 inch piece
of flannel fabric. Matching right sides and short
edges, fold fabric in half. Using 1/4 inch seam
allowance, sew sides of bag together. Turn bag right
side out. Fringe top edge of bag. Gather top of bag
together and secure with ribbon or raffia and add a
cookie cutter. Add gift tag.
