~ Peanut Butter Oatmeal Cookies ~
3/4 cup butter flavored shortening
1 cup peanut butter
1 1/2 cups brown sugar, firmly packed
1/2 cup water
1 egg
1 t vanilla
3 cups oats, quick or old fashioned, uncooked
1 1/2 cups flour
1/2 t baking soda
granulated sugar
Beat the first three ingredients together until creamy.
Beat in the water, egg, and vanilla. Add the combined
dry ingredients. Mix well. Cover and chill; about two
hours. Heat oven to 350F. Shape the cookie dough into
1-inch balls. Place on an ungreased cookie sheet. Flatten
the cookies with tines of a fork dipped in granulated
sugar to form a crisscross pattern. Bake for 9 - 11
minutes or until the cookie edges are golden brown.
Cool for one minute on the cookie sheet. Remove to
a wire rack to cool completely.
Makes 7 dozen cookies

Place cookies in box. Embellish box with ribbon and a
sprig of holly. Add gift tag.
