~ Orange Oatmeal Cookies ~
1/2 cup butter or margarine, softened
1 cup light brown sugar
1 egg
1 1/2 t grated orange peel
1/4 cup orange juice
1 cup flour
1/2 t baking powder
1/2 t baking soda
1/4 t salt
1/4 t nutmeg
2 cups oats
Preheat oven to 350F.
In a large bowl of mixer, cream butter and
sugar until fluffy. Beat in egg, orange peel,
and juice. Gradually beat in flour, baking
powder, baking soda, salt and nutmeg until
mixed. Stir in oats and mix well. Drop by
heaping teaspoonfuls on greased (or parchment
paper lined) cookie sheets. Bake for 8 - 10
minutes or until golden around edges.
