~ Old Fashioned Lemon Sugar Cookies ~
3 cups flour
2 t baking powder
1/2 t salt
2 cups sugar
1 cup shortening
2 eggs
1/4 cup lemon juice
additional sugar
Preheat oven to 350F.
Stir together the flour, baking powder and
salt; set aside. In large mixing bowl, beat
sugar and shortening until fluffy; beat in
eggs. Stir in dry ingredients. Add in lemon
juice. Mix well. Chill 2 hours or overnight.
Shape into small balls, 1 1/4 inch or less;
roll in additional sugar. Place on greased
baking sheets 2 inches apart; flatten with
spatula. Bake 8 - 10 minutes or until
lightly browned.

For gift giving package cookies in a 2 quart
acrylic canister with wire hinged lid. Embellish
canister with curly Christmas ribbon around neck
of canister and Christmas graphics.
