~ Oatmeal Toffee Cookies ~
3/4 cup butter, softened
1/2 cup packed light brown sugar
1 egg
1 t vanilla extract
1 1/2 cups rolled oats
1 cup all-purpose flour
1/2 t baking soda
1/4 t salt
1/2 cup chopped pecans
2 cups toffee baking bits
Preheat oven to 300F.
Line cookie sheets with parchment paper. In a
medium bowl, cream together the butter and brown
sugar. Stir in the egg and vanilla until smooth.
Sift together the flour, salt and baking soda,
stir into the creamed mixture. Then stir in the
rolled oats. Finally, stir in the chopped candy
bar pieces. Drop dough by rounded tablespoons
onto the prepared cookie sheets, and flatten
slightly. Bake for 10 - 18 minutes. Cookies will
have a dry appearance when finished baking.

For gift giving package cookies in cellophane bag.
Place bag of cookies in a decorated bag. Use
paperbacked fusible web, assorted fabrics for
appliques, lunch-size brown paper bag, buttons
and glue. Decorate bag with appliques backed
with fusible web, fuse to bag per manufacturers
instructions. Print country graphics and fuse
web to back of graphics, arrange on bag and
fuse to bag. Embellish with buttons and any
other embellishment you wish to use. Add
gift tag and homespun fabric if desired.
Great in a gift basket.
