~ Oatmeal Pudding Cookies ~
1 1/4 cups all-purpose flour
1 t baking soda
1 cup butter or margarine, softened
1/4 cup granulated sugar
3/4 cup light brown sugar, firmly packed
1 pkg instant vanilla pudding mix**
(**4 serving size)
2 eggs
3 1/2 cups quick cooking rolled oats
1 cup raisins, optional
Preheat oven to 375F.
Mix flour with baking soda. Combine butter,
sugars and pudding mix in a large mixer bowl,
then beat until smooth and creamy. Beat in
eggs. Gradually add flour mixture; then stir
in oats and raisins (batter will be stiff).
Drop by rounded teaspoonfuls onto ungreased
baking sheets, about 2 inches apart. Bake
for 10 - 12 minutes.
Makes 5 dozen cookies

For gift giving package cookies in decorative
cellophane bag. Tie with Christmas curly ribbon.
Place in gift basket with fabric napkins. Embellish
basket with Christmas greenery and ribbon.
