~ Oatmeal Pecan Cookies ~
2 cups granulated sugar
2 T cocoa
1/2 cup evaporated milk
1/2 cup butter
3 T peanut butter
1 t vanilla
1/2 cup chopped pecans (optional)
2 1/2 cups quick-cooking oats
Combine cocoa, sugar, milk, and butter
in saucepan. Bring to a boil over
medium heat, stirring regularly for
about 1 minute. Remove from heat. Stir
in peanut butter, pecans (if using) and
vanilla. Mix well. Add oatmeal until
completely mixed. Drop by teaspoonfuls
onto waxed paper and chill until firm.
Store in an airtight container. No
bake recipe.

For gift giving package cookies in a decorative
cellophane bag. Place bag of cookies in a napkin
lined wire basket. Add several different coffees,
coffee mugs, and napkins to basket. Embellish
basket with ribbon, ornament, and gift tag.
