~ Oatmeal Cinnamon Cookies ~
2 cups old fashioned oats
1 1/2 cups all-purpose flour
1 1/2 t cinnamon
1/2 t baking soda
1/2 t salt
1 large egg
1 cup sugar
1 cup butter melted and cooled
1 T dark molasses
1/4 cup milk
1/2 cup chopped pecans
Preheat oven to 350F.
Combine oats, flour, cinnamon, baking soda, and salt in a
bowl. Mix and set aside. In a separate bowl, beat together egg
and sugar. Add butter and continue beating. When completely
blended, add molasses and milk and blend again. Stir in the oat
mixture and the pecans. Using either an individual 1/4 cup
measure or a 2 oz ice cream scoop, scoop level measures of
dough onto ungreased cookie sheets, spacing the scoopfuls
2 1/2 inches apart. Bake until golden brown about 15 minutes.
Let sit 1 minute, then transfer to rack and let cool. To prevent
hardening, wrap each cookie individually in plastic wrap and
store at room temperature for up to 3 days. Can also be frozen
and stored for up to 6 months dough may be used immediately or
refrigerated for up to 5 days or frozen up to 3 months.
Thaw before baking.
