~ Mini Chip Pumpkin Cookies ~
1/4 cup butter or margarine, softened
1 cup sugar
1 cup canned pumpkin
2 eggs
2 1/4 cups all-purpose flour
2 t baking powder
3/4 t pumpkin pie spice
1/2 t baking soda
1/2 t salt
1 cup mini chip semisweet chocolate
1/2 cup chopped pecans (optional)
Chocolate Glaze (recipe below), optional
Preheat oven to 350F.
Lightly grease cookie sheet. Beat butter and sugar in large
bowl until fluffy. Add pumpkin and eggs; blend well. Stir
together flour, baking powder, pumpkin pie spice, baking soda
and salt; add to butter mixture, blending well. Stir in small
chocolate chips and pecans, if desired. Drop by heaping
teaspoonfuls onto prepared cookie sheet. Bake 12 - 14 minutes
or until lightly browned. Remove from cookie sheet to wire
rack. Cool completely. Pipe decorative design on top of each
cookie with Chocolate Glaze, if desired.
Makes 4 dozen cookies
~Chocolate Glaze~
Combine 2/3 cup mini chips semisweet chocolate and 2 teaspoons
shortening (do not use butter, margarine, spread or oil) in
small heavy saucepan over low heat; stir until melted. Remove
from heat; cool, stirring occasionally, about 15 minutes or until
of desired consistency. Place into pastry bag fitted with writing
tip; use immediately.

Decorate tin with country graphics and give as a gift.
Line tin with decorative cellophane, tie tin closed with
a homespun fabric bow and add gift tag.
