~ Lemon Refrigerator Cookies ~
2 sticks butter or margarine
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 T shredded lemon peel
2 to 3 T lemon juice
4 cups sifted flour
1/4 t baking soda
1/2 cup finely chopped nuts
Preheat oven to 375F.
Cream butter and sugars; add eggs, lemon peel
and lemon juice; beat well. Blend flour and
baking soda; add to creamed mixture. Add nuts
and mix well. shape into 2 or 3 rolls, about 2
inches in diameter. Wrap each roll in waxed
paper. Chill in refrigerator until firm. Cut
rolls into 1/4 inch slices. Bake on a cookie
sheet for about 10 minutes until lightly browned.

For gift giving package cookies in a decorative
cellophane bag. Place bag of cookies in a napkin
lined wire basket. Add several different coffees,
coffee mugs, and napkins to basket. Embellish
basket with ribbon, ornament, and gift tag.
