~ Lemon Chocolate Chip Cookies ~
3/4 cup butter softened
1 cup sugar
2 large eggs
2 t pure lemon extract
2 cups all-purpose flour
1/2 t baking soda
1/2 t ground cinnamon
2 cups miniature semisweet chocolate chips
Preheat oven to 300F.
Cream together butter and sugar until light
and fluffy. Beat in eggs and lemon extract.
In a small bowl, whisk together the flour,
baking soda and cinnamon. Add the dry
ingredients to butter mixture and blend well
Fold in chocolate chips Drop dough by the
teaspoonful onto ungreased baking sheets.
Bake for 12 - 15 minutes Cool on the cookie
sheets for 3 minutes, then move to wire racks
to finish cooling. Store in airtight
containers or freeze.

For gift giving package cookies in a ziplock bag.
Place bag of cookies in a flannel gift bag. To make
flannel gift bag, use a 10 1/2 x 25 inch piece of
flannel fabric. Matching right sides and short edges
fold fabric in half. Using 1/4 inch seam allowance,
sew sides of bag together. Turn bag right side out.
Fringe top edge of bag. Gather top of bag together
and secure with ribbon or raffia and add a cookie
cutter. Add gift tag.
