~ Island Cookies ~
1 2/3 cups flour
3/4 t baking powder
1/2 t baking soda
1/2 t salt
3/4 cup butter or margarine
3/4 cup packed brown sugar
1/3 cup granulated sugar
1 t vanilla
1 large egg
1 3/4 cups milk chocolate chips
1 cup flaked coconut
1 cup chopped walnuts
Preheat oven to 350F.
Combine flour, baking powder, baking soda and
salt in a small bowl. Beat butter, brown sugar,
granulated sugar and vanilla in large mixer bowl
until creamy. Beat in egg. Gradually beat in
flour mixture. Stir in morsels, coconut and nuts.
Drop by slightly rounded tablespoons onto ungreased
(or parchment paper lined) baking sheets. Bake for
8 - 11 minutes or until edges are lightly browned.
Cool on baking sheets for 2 minutes; remove to wire
racks to cool completely.

For gift giving, package cookies in a cellophane bag.
Place cellophane bag in sponge painted gift box. Use
homespun fabric or Christmas ribbon for the bow.
Add gift tag.
