~ Cranberry Pecan Scones ~
~Scones~
2 cups whole-wheat pastry flour
1/4 cup sugar
1 T baking powder
3/4 t cinnamon
2 T butter, softened
2 T fat-free cream cheese, softened
3/4 cup fresh cranberries, coarsely chopped
1/4 cup pecans, chopped
1/2 cup skim milk
1 egg
~Streusel Topping~
1 T I Can't Believe It's Not Butter! Spray
3 T whole wheat pastry or all-purpose flour
2 T sugar
2 T finely chopped pecans
Preheat oven to 375F.
Line cookie sheet with parchment paper or coat with baking
spray. In large bowl, combine flour, sugar, baking powder
and cinnamon; mix well. With pastry blender, cut in butter
and cream cheese until mixed in. Stir in cranberries and
pecans. In small bowl, beat milk and egg together. Add
to flour mixture. Stir just until dry ingredients are
moistened. On floured surface, gently knead dough several
times (dough will be sticky). Divide dough in half; place
on cookie sheet. Pat each half into 6 inch round. Cut
each round into 6 wedges; do not separate. To make
streusel combine margarine spray, flour, sugar and pecans
Stir with fork until well-blended and crumbly. Sprinkle
on top of rounds Bake for 25 minutes or until golden
brown at edges. Cool 10 minutes before serving.
Makes 12 scones

Use wrapping paper to decoupage a plate. Add scones and
wrap filled plate with Saran Wrap. Add ribbon and gift
tag. Decoupage plate is for decorative use only.
Wipe clean with damp cloth.
