~ Cranberry Oatmeal Cookies ~
1 1/2 cups flour
1 t baking powder
1/4 t baking soda
1/2 cup butter
1/4 cup shortening
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 t vanilla
2 cups rolled oats
1 1/2 cups dried cranberries
3/4 cup chocolate chips (optional)
1 cup coarsely chopped toasted pecans
Preheat oven to 375F.
In a medium mixing bowl combine flour, baking
powder and baking soda. Set aside. In a large
bowl, beat butter and shortening with an
electric mixer on medium speed for 30 seconds.
Add brown sugar and sugar. Beat until combined.
Beat in eggs and vanilla. Beat as much of the
flour mixture into the sugar mixture as you
can with the mixer. Stir in remaining flour
mixture. Stir in rolled oats, dried cranberries,
(chocolate chips, if desired) and pecans. Drop
dough by rounded teaspoonfuls 2 inches apart
onto ungreased cookie sheet. Bake for 9 - 11
minutes or until edges of cookies are golden.
Cool cookies on a wire rack.

cellophane bag. Place bag of cookies in a gift
basket that is fabric lined. Add a package of
coffee beans and a pair of coffee mugs. Tie with
a raffia bow. Add gift card.
