~ Coconut Drops ~
1 cup all-purpose flour
1/2 t baking soda
1/4 t baking powder
1/4 t salt
1/2 cup margarine, softened
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 egg
1/2 t vanilla
1 cup Rice Krispies cereal
1 cup quick oats, uncooked
1/2 cup shredded coconut
vegetable cooking spray
Preheat oven to 350F.
In medium mixing bowl, combine flour, soda,
baking powder and salt. Set aside. In large
mixing bowl, beat together margarine and
sugars until well combined. Add egg and vanilla
Beat well. Add flour mixture, mixing until well
combined. Stir in Rice Krispies® cereal, oats
and coconut. Drop by level measuring-tablespoon
onto baking sheets coated with cooking spray.
Bake for 12 minutes or until lightly browned.
Cool on wire racks. Store in airtight container.
