~ Cinnamon Crisp Cookies ~
2 cups flour
dash of salt
2 1/2 t cinnamon
1 cup butter
1 cup sugar
1 egg, separated
1/3 cup finely chopped pecans (optional)
Preheat oven to 350F.
Sift flour, salt & cinnamon together. Set aside.
Cream butter & sugar. Beat in egg yolk. Gradually
add the sifted dry ingredients. The dough will be
stiff. Add pecans. Form into small balls & flatten
gently with hand. Crisscross with fork & brush with
egg white. Bake for 8 - 10 minutes.

For gift giving package cookies in a 2 quart
acrylic canister with wire hinged lid. Embellish
canister with curly Christmas ribbon around neck
of canister and Christmas graphics.
