~ Chocolate Snowballs ~
1 1/4 cups butter
2/3 cup sugar
1 t vanilla extract
2 cups all-purpose flour
1/8 t salt
1/2 cup unsweetened cocoa powder
2 cups chopped pecans
1/2 cup confectioners sugar
Preheat oven to 350F.
In a medium bowl, cream butter and sugar
until light and fluffy. Stir in the vanilla.
Sift together the flour, salt and cocoa.
Stir into the creamed mixture. Then stir
in the nuts until well blended. Cover and
chill for at least 2 hours. Roll chilled
dough into 1 inch balls. Place on an
unprepared cookie sheet about 2 inches
apart. Bake for 20 minutes in the
preheated oven. Roll in confectioners
sugar when cooled.
