~ Chewy Coconut Macadamia ~
Nut Cookies
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, firmly packed
1 t vanilla
2 eggs
2 1/4 cups flour
1 t baking soda
1 t cinnamon
1/2 t salt
1 cup old-fashioned rolled oats
1/2 cup shredded coconut
1/2 cup coarsely chopped macadamia nuts
Preheat oven to 375F.
In a large bowl, combine butter, sugar and brown sugar;
beat until light and fluffy. Add vanilla and eggs; beat
until smooth. Add flour, baking soda, cinnamon and salt;
mix well. Add oats, coconut and nuts; blend well. Drop
dough by rounded teaspoonfuls 2 inches apart onto ungreased
cookie sheets. Bake for 8 to 10 minutes or until golden
brown. Cool 2 minutes and remove from cookie sheets.

For gift giving package cookies in a decorative
cellophane bag. Place bag of cookies in a napkin
lined wire basket. Add several different coffees,
coffee mugs, and napkins to basket. Embellish
basket with ribbon, ornament, and gift tag.
