~ Chewiest Chocolate Cookies ~
1 1/4 cups butter or margarine, softened
2 cups sugar
2 eggs
2 t vanilla 2 cups all-purpose flour
3/4 cup regular or Dutch cocoa
1 t baking soda
1/2 t salt
1 cup finely chopped pecans or walnuts
Preheat oven 350F.
Cream butter or margarine in a large mixer
bowl using a wooden spoon. Add the eggs,
one at a time, and blend well after each
addition. Stir in the vanilla, mixing to
combine. Sift the cocoa, flour, baking
soda, and salt. Add to the creamed mixture
and blend using a wooden spoon. Stir in the
nuts. Drop by rounded teaspoonfuls onto
ungreased cookie sheets. Bake for 8 - 9
minutes. Do not over bake. Cookies will
be soft when removed from oven. They will
puff up during the baking but will flatten
upon cooling. Cool the cookies on the cookie
sheet until they are set. This will take
about one to two minutes. Remove them to a
wire rack to complete to cooling.
