~ Cashew Butter Cookies ~
1/2 cup brown sugar, firmly packed
3/4 cup butter, softened
1/2 cup honey
1 egg
2 cups flour
3/4 t baking soda
1/2 t baking powder
1 cup chopped salted cashews
salted cashew halves
Preheat oven to 375F.
In a large mixing bowl combine brown sugar, butter,
honey and egg. Beat at medium speed until creamy.
Reduce speed to low; add all remaining ingredients
except chopped cashews and cashew halves. Continue
beating until well mixed. By hand, stir in the
chopped cashews. Drop dough by rounded teaspoonful
2 inches apart onto cookie sheets; top each cookie
with cashew half. Bake for 6 to 9 minutes
or until golden brown.
Makes 4 1/2 dozen cookies

For gift giving package cookies in a 2 quart
acrylic canister with wire hinged lid. Embellish
canister with curly Christmas ribbon around neck
of canister and Christmas graphics.
