~ Butterscotch Oatmeal Cookies ~
1/2 cup shortening
1/4 cup plus 2 T white sugar
1/4 cup plus 2 T brown sugar
1 egg, beaten
1 1/2 t hot water
3/4 cup flour
1/2 t baking soda
1 cup chopped pecans or walnuts, optional
1 cup oatmeal
1 1/2 t vanilla
1 cup butterscotch chips
Preheat oven to 375F.
Cream shortening and sugar. Add beaten egg, then
hot water. Add flour mixed with soda. Add chopped
nuts. Add oatmeal, vanilla and butterscotch chips.
Drop by teaspoonfuls on ungreased (or parchment
lined) cookie sheets. Bake for 10 - 12 minutes.

For gift giving package cookies in cellophane bag.
Add to gift basket with favorite tea mixture, tea
infuser, and teacup or coffee mug. Embellish basket
with greenery and ribbon. Add gift tag.
