~ Black Pepper Cookies ~
1 cup unsalted butter
1 cup sugar
1 cup dark corn syrup
1 T vinegar
4 1/2 cups bleached all-purpose flour
1 t baking soda
1 t ground ginger
1 t ground cinnamon
1 t ground cloves
1/2 t finely ground black pepper
2 large eggs
Preheat oven to 375F.
In a heavy saucepan over medium heat melt the butter.
Add the sugar, corn syrup and vinegar. Bring the
mixture to a low boil and immediately remove from the
heat and cool to room temperature. In a medium bowl
add the flour, baking soda, ginger, cinnamon, cloves
and pepper. Stir to combine. Beat the eggs into the
butter mixture. Add the dry ingredients and stir until
well combined. Scrape the dough onto a large sheet of
plastic wrap, seal and refrigerate for two hours or
overnight. Roll dough on lightly floured surface to
a thickness of 1/4 inch. Cut into shapes and transfer
to ungreased baking sheet. Cut remaining scraps.
Bake 10 - 12 minutes for soft cookies or 13 - 15
minutes for crisp cookies.
Makes 5 dozen cookies

For gift giving package cookies in a decorative
cellophane bag. Place bag of cookies in a napkin
lined wire basket. Add several different coffees,
coffee mugs, and napkins to basket. Embellish
basket with ribbon, ornament,
and gift tag.
