~ Apricot Jam Squares ~
1/2 cup butter or margarine
1 cup sugar
1 t grated lemon rind
2 eggs, separated
1 cup sifted flour
1 t salt
1/4 t soda
1--1 lb jar apricot jam
1/2 cup finely chopped nuts
Preheat oven to 350F.
Cream butter or margarine with 3/4 cup sugar and lemon
rind until fluffy. Add egg yolks, one at a time, beating
well after each addition. Sift together flour, salt and
soda. Blend into creamed mixture. Spread batter in
greased shallow 12 x 8-inch baking pan. Cover batter
with apricot jam. Beat egg whites until stiff but still
moist. Add 1/4 cup sugar, beating until meringue forms
stiff peaks. Fold in nuts. Spread nut meringue over
apricot jam layer. Bake 45 minutes or until firm. Cut
into squares and cool.
Makes 48 (2-inch) squares

For gift giving, package cookies in a cellophane bag.
Place cellophane bag in sponge painted gift box. Use
homespun fabric or Christmas ribbon for the bow.
Add gift tag.
