~ Apricot Bars ~
3/4 cup butter or margarine, softened
1 cup sugar
1 egg
1 1/2 t vanilla
1/2 t salt
2 cups flour
1 1/2 cups shredded coconut
1--8 oz jar apricot preserves
1 cup walnuts, chopped
Preheat oven to 350F.
Cream butter, sugar, egg and vanilla until fluffy.
Mix in salt, flour and coconut; stir well. Reserve
3/4 cup of the mixture for topping spread the rest
in a greased 9x11 inch pan. Spread apricot preserves
over the mixture. Sprinkle walnuts over the preserves.
Dot the reserved 3/4 cup of mixture over the top.
Bake for 30 minutes. Cool slightly and cut into bars.
Makes 24 bars
