~ Applesauce Granola Cookies ~
1 cup brown sugar
1/2 cup solid vegetable shortening
1 t vanilla
1 egg
1/2 cup applesauce
2 cups flour
2 cups granola
1/2 t baking soda
1/4 t salt
Preheat oven to 375F.
In a large bowl, combine brown sugar, shortening,
vanilla and egg and mix until well blended. Add
applesauce and blend well. Stir in flour, granola,
baking soda and salt and mix well. Drop by
tablespoons onto cookie sheets, about 2 inches
apart. Bake for 10 - 12 minutes or until cookies
spring back when lightly touched in the center.
Cool 2 minutes, then remove from cookie sheets.
Makes 42 cookies

Decorate tin with country graphics and give
as a gift. Line tin with decorative cellophane,
tie tin closed with a homespun fabric bow and
add gift tag. Great addition to a gift basket.
