~ Apple Bars ~
1 cup plus 2 T shortening
1/2 t ground cinnamon
2 3/4 cups unbleached flour
1/4 t ground allspice
1 t salt
1 egg white
milk
1 cup powdered sugar
1 egg yolk, slightly beaten
1/2 t vanilla
1 cup crushed Wheaties cereal
1 to 2 T water
7 to 8 cups thinly sliced, pared apples
3 T finely chopped nuts
2/3 cup granulated sugar
Preheat oven to 350F.
Cut shortening into flour and salt until particles
are size of small peas. Add enough milk to egg yolk
to measure 2/3 cup. Stir into flour mixture until
pastry almost cleans side of bowl. Gather pastry
into ball; divide into 2 equal parts. Shape each
part into flattened round on lightly floured cloth
covered board. Roll 1 part into rectangle, 15x10
inches, with stockinette-covered rolling pin; fold
into thirds. Place in jelly roll pan, 15 1/2 x
10 1/2 inches; unfold to cover bottom of pan.
Sprinkle crushed cereal on pastry in pan. Mix
apples, granulated sugar, cinnamon and allspice;
spread over cereal. Roll remaining pastry into
rectangle 15x10 inches; fold into thirds. Gently
place over apples; unfold. Beat egg white until
soft peaks form; spread over pastry. Bake until
crust is golden brown, 55 - 60 minutes. Mix
powdered sugar, vanilla, and water until smooth
and cream; spread over warm crust. Sprinkle with
nuts. Cut into bars, about 3 x 1 1/2 inches.
Makes 30 bars

with cellophane. Embellish pan with ribbon.
