~ Almond Cookies ~
1 cup sugar
1 cup powdered sugar
1 cup butter or margarine
1 cup oil
1 t almond extract
2 eggs
3 1/2 cups flour
1 cup whole wheat flour
1 t soda
1 t salt
1 t cream of tartar
2 cups chopped almonds
6 oz English toffee bits** Skor brand
Preheat oven to 350F.
Blend sugar, powdered sugar, butter and oil until
well mixed. Add almond extract and eggs and mix
well. Lightly spoon and blend in flours, soda,
salt and cream of tartar at low speed. By hand,
stir in almonds and brickle chips. Shape into
balls and roll in sugar. Crisscross balls with
fork dipped in sugar. Bake on ungreased cookie
sheets for 12 - 18 minutes. Cool on cookie sheet
for 1 minute then remove.
Makes 8 - 10 dozen cookies

For gift giving package cookies in a 2 quart
acrylic canister with wire hinged lid. Embellish
canister with curly Christmas ribbon around neck
of canister and Christmas graphics.
