~ Rainbow Rocky Road Brownies ~
~Brownies~
1--1 lb 3.5 oz pkg Pillsbury Rich and Moist Fudge Brownie Mix
1/4 cup water
1/2 cup oil
1/2 cup egg substitute
~Topping~
1 1/2 cups miniature marshmallows
2/3 cup chocolate mini baking bits
1/2 cup salted peanuts
1/2 cup caramel topping
Preheat oven to 350F.
Grease bottom of 13x9 inch pan or spray with
nonstick cooking spray. In large bowl, combine
brownie mix, water, oil and egg beaters; beat
50 strokes with spoon. Spread in greased pan.
Bake for 28 - 30 minutes. Remove pan from oven.
Immediately sprinkle with marshmallows, baking
bits and peanuts. Drizzle with caramel topping.
Bake an additional 5 - 7 minutes or until
marshmallows begin to puff. Cool completely.
Makes 16 servings

For gift giving bake brownies in a decorative disposable
aluminum covered pan. Leave baked brownies in pan.
Embellish pan with ribbon. Add recipe card.
