~ Pumpkin Orange Cake ~

1 1/4 cups sugar
1/2 cup margarine, softened
2 large eggs
1 cup canned mashed pumpkin
1/2 cup milk
1/4 cup orange juice
1 T grated orange peel
2 cups all-purpose flour
1 T baking powder
1 t ground cinnamon
1/2 t salt
1/2 t baking soda
1/2 t ground ginger
1/2 t ground allspice
1/2 cup chopped pecans
Orange Butter Frosting (recipe below)

Preheat oven to 350F.
In a large bowl, with electric mixer at medium speed,
cream margarine and sugar together until fluffy. Beat
in eggs. In a separate bowl, blend together pumpkin,
milk, orange juice and orange peel. In another bowl,
stir together remaining ingredients except pecans: add
alternately with pumpkin mixture to creamed mixture.
Stir in nuts. Pour batter into a greased 13x9 inch
baking dish or 2 greased 8 inch round pans. Bake for
25 - 35 minutes or until cake tests done. Cool layer
10 minutes in pan before removing to cake rack to cool
completely. Let 13x9 dish cool completely. Frost with
Orange Butter Frosting.

~Orange Butter Frosting~
4 cups confectioners sugar
1/2 cup softened margarine
3 or 4 T orange juice
2 t grated orange rind

Combine confectioners sugar, margarine, orange juice,
and orange rind in electric mixer or food processor.
Blend until smooth. Spread on Pumpkin Orange Cake.

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
