~ Pumpkin Cheese Coffee Cake ~
2 cups sugar
2 eggs
1 1/4 cups cooked or canned pumpkin
1/4 cup vegetable oil
1/2 t vanilla extract
2 1/4 cups all-purpose flour
2 t ground cinnamon
1 t baking soda
1/2 t salt
~Filling~
1--8 oz pkg cream cheese, softened
1 egg
1 T sugar
~Topping~
3/4 cup flaked coconut
1/2 cup chopped pecans
1/4 cup packed brown sugar
1/4 t ground cinnamon
Preheat oven to 325F.
Combine all ingredients and pour into a greased
9x13 inch pan. Bake for 35-40 minutes. Cool & frost
Frosting: Combine all frosting ingredients except
coconut and pecans. Cook until thick. Remove from
heat then add coconut and pecans.
Cool and spoon on cake.

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
