~ Pineapple Coffee Cake ~
1 1/2 cups all-purpose flour
1/2 cup wheat germ
1/2 cup brown sugar
2 t baking powder
1/2 t cinnamon
1/2 t salt
1/2 t baking soda
1--8 oz can pineapple, crushed udrained
4 egg whites
1/4 cup applesauce
~Topping~
2 T granulated sugar
1/2 t cinnamon
Preheat oven to 350F.
Lightly grease and flour an 8x8 inch pan or spray with
non-stick cooking spray. Mix dry ingredients (reserve
granulated sugar and 1/2 teaspoon cinnamon for topping)
together. Mix remaining ingredients together then stir
into dry ingredients until just moistened. Pour into
pan and top with cinnamon-sugar mixture. Bake 40 - 45
minutes.

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
