~ Orange Coffee Cake ~
2 cups all-purpose flour
1/2 t salt
1 T baking powder
1/3 cup sugar
1 to 2 t grated orange zest
1/4 cup shortening
1/4 cup milk
1/2 cup orange juice
1 t vanilla
1 egg, beaten
Preheat oven to 400F.
Sift dry ingredients; add orange peel. Cut in shortening
until mixture resembles coarse crumbs. Combine remaining
ingredients; add all at once then stir just until dry
ingredients are moistened. Pour into a greased 9-inch
square pan. Sprinkle with Orange Topping (below). Bake
for 30 minutes. Serve warm.
~Orange Topping~
1/2 cup sugar
1 to 2 T finely grated orange zest
1 t cinnamon
1 T butter
Combine topping ingredients then sprinkle over
orange coffee cake batter.

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
