~ Irish Scones ~
2 cups self-rising flour
1/4 cup white sugar
1/4 cup butter, softened
1/4 to 1/2 cup (*add in) raisins, dried
cranberries, currants, chocolate chips
1 egg
4 T milk
Preheat oven to 350F.
Mix flour and butter until crumbly. Then add sugar and
whatever *add in. Make a well in the center of the flour
mixture. Beat the egg and the 4 tablespoons of milk in
a small bowl. (Save a little of this mix to brush onto
the tops of the scones) Add the rest of the egg mixture
into the well in the center of the flour mixture. Mix
well. Roll out onto a floured board to about 3/4 inch
thickness. Use cookie cutters or a biscuit cutter to
cut out. Place on a baking sheet very closely together,
touching each other. Use the remainder of the egg/milk
mixture to brush on top. Bake 10 minutes only.
Makes 1 dozen scones
