~ Irish Apple Coffee Cake ~
1 cup cooking oil
2 large eggs
2 1/2 cup flour
1 t cinnamon
1 cup chopped nuts
2 cups sugar
1 t vanilla
2 t baking powder
1 t salt
4 cups diced apples
1--6 oz pkg butterscotch bits
Preheat oven to 350F.
Cream oil, sugar, eggs and vanilla together until
fluffy. Combine with dry ingredients and mix well.
Add nuts and apples and spread in a 9x13 inch pan
that has been lightly greased on bottom only.
Sprinkle butterscotch chips on top and bake
50 - 60 minutes.

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
