~ Holiday Coffee Cake ~
2 cups biscuit mix
1--14 oz can sweetened condensed milk**
(**not evaporated milk)
3/4 cup sour cream
1/4 cup butter or margarine, melted
2 eggs
1 1/2 t ground cinnamon, divided
1/2 cup chopped pecans
2 T firmly packed light brown sugar
1 T butter or margarine, melted
Preheat oven to 350F.
In large mixing bowl, beat biscuit mix, sweetened condensed
milk, sour cream, 1/4 cup butter, eggs and 1/2 teaspoon
cinnamon until smooth. Pour batter into lightly greased
11x7 inch baking dish. In small mixing bowl, combine
pecans, brown sugar, 1 tablespoon butter and remaining
1 teaspoon cinnamon. Sprinkle mixture evenly over batter.
Bake 40 - 45 minutes or until wooden pick inserted in
center comes out clean. Cool in dish on
wire rack 10 minutes.
Makes 8 servings
