~ High Country Apple Cake ~
1 3/4 cups sugar
3 eggs
1 cup oil
2 cups flour
1 t salt
1 t vanilla
1 t baking powder
1 T cinnamon
2 cups unpeeled, cubed apples
1/2 cup pecans, chopped (optional)
Preheat oven to 350F.
Measure all ingredients, except apples and pecans,
into large bowl. Beat together thoroughly with
spoon. Fold in apples and pecans. Bake in greased
and floured 9x13 inch pan for 45 - 50 minutes.
Cool and remove from pan.
Makes 12 servings

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
