~ Gingerbread Ring ~
4 cups all-purpose flour
1--12 oz jar light molasses
1 cup butter or margarine, softened
1/2 cup packed dark brown sugar
2 1/2 t ground ginger
2 t baking soda
1/2 t ground cinnamon
1/2 t salt
2 lg eggs
1 1/2 cups confectioners sugar
cinnamon drops and Christmas sprinkles for garnish
Preheat oven to 350F.
Grease 10 inch Bundt pan. In large bowl, with mixer at
medium speed, beat flour, molasses, butter, brown sugar,
ginger, baking soda, cinnamon, salt, eggs, and 1 cup hot
water until well blended. Pour batter into pan. Bake
45 - 50 minutes until toothpick inserted in center of
cake comes out clean. Cool cake in pan on wire rack 10
minutes. With spatula, loosen cake from pan and invert
onto wire rack to cool completely. To glaze and decorate
cake. In small bowl, with spoon, stir confectioners sugar
with 2 tablespoons water until smooth. Spoon confectioners
sugar glaze over top of cake allowing it to run down sides.
Garnish with sprinkles.
Makes 16 servings

For gift giving place cake on a decorative holiday plate.
Give with a basket containing favorite tea mixture, tea
infuser, and teacup or coffee mug. Embellish basket with
greenery and ribbon. Add gift tag and recipe card.
