~ Danish Applesauce Cake ~
1/2 cup soft butter
1/2 t salt
2 cups sugar
1 t cinnamon
1 egg, beaten
1 t allspice
1 1/2 cups thick applesauce
1 t baking powder
2 1/2 cups flour, sifted
1/2 cup buttermilk
1 cup golden raisins
2 t baking soda
1 cup chopped walnuts
Preheat oven to 350F.
Mix beaten egg snd applesauce. Add to creamed
butter and sugar. Sift flour twice. Dredge
raisins and nuts with a little of the flour.
Sift flour, salt, spices, and baking powder
together. Add to first mixture with buttermilk
and baking soda. Blend well. Fold in raisins
and nuts. Pour into a greased and lightly
floured 9x12x2 inch pan. Bake for about 1 hour
Frost with desired icing and serve warm.
Makes 8 - 10 servings

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
